Because Toei (and probably Toriyama) dicided that nostalgia was more important than a cooler Gi. A more positive way of saying it would be to maintain classic iconography. Maybe because his original gi is the only training outfit available, his whis gi was quite beat up after the tournament. Because he's not living on Beerus's planet as of now.
