Apr 30, 2023 · Schmaltz is a common term in the US, because it's the Yiddish word for kosher poultry fats. Rendered duck, goose, or chicken fat. As used for cooking, or as a spread. So US usage is basically the Yiddish. It usually means chicken fat, occasionally duck or goose.

Schmaltz comes form rendering fat and bones, in a pan or oven. Next time you make stock. Get all the bones and skin on a roasting rack in a pan. Roast the bones golden. All the fat that rendered off and is at the bottom of your pan, that's your schmaltz. You can now make beautiful stock with the bones. For traditional schmaltz.

For duck confit I probably would reach for a neutral oil instead of schmaltz because I'd be concerned it would come out too chicken-y.

Aug 2, 2020 · I've been making yeasted bread since I was 7 (with my grandparents and great grandparents) and they always added schmaltz to their breads/pastry breads. They said it was the "secret" ingredient. When older, started adding it to crusts (pie, quiche and tart) and the depth of flavor is great. Not for everything, but it works in many things.
