Oct 10, 2003 · Ah, the elusive bao dough that steams up fluffy white. There's a recipe in Wei-Chuan Publishing's Chinese Dim Sum cookbook that is on my list of recipes to try. It calls for cake flour and ammonium bicarbonate.

Mar 20, 2006 · Here we ordered cha siu bao, sticky lotus rice, hum soi gok, chicken feet, fried calamari, and Vietnamese spring rolls. I think we ordered one other thing, but I can't remember what it was. The cha siu bao was the perfect balance of bread and filling. They bread was light, and the filling was ample and flavourful. The hum soi gok was OK.

Now... Suckling pigs, roast goose, roast pork, barbequed pork slices, jelly fish... no. These are traditionally items sold in Cantonese barbeque specialty shops.

Mar 9, 2004 · Besides pork bones, we also add red dates, dried oysters, dried scallops and dried squid to our lotus root soup. As kids, we used to call lotus root soup as piggy's nose soup as the sliced pieces of lotus root soup looks kind of like a front-up view of a pig's nose (with more than 2 nostrils though!)

Jul 2, 2012 · A little off topic, but very interesting fact with lotus. Lotus leaf is better than Teflon in non-stick qualities. In science, it is called "Lotus effect" They now sell paint, using nano technology, to impart lotus effect to make the paint dirt and water repellent. I think they may be trying to make cookware with lotus effect. dcarch

Jan 26, 2004 · Shrimp and vegetable bao - nice bun texture, lightly fried. Yet, I wanted this to be a little better than it was. Custard buns - custard filling inside of layered bao dough, steamed. Very good. Char siu bao - nice, fluffy, tender dough, but the filling was a little too gloppy for my taste
