Justin Elmer Wilson (April 24, 1914 – September 5, 2001) was a Southern American chef and humorist known for his brand of Cajun -inspired cuisine, humor and storytelling. Wilson was born in Roseland near Amite, the seat of Tangipahoa Parish, one of the "Florida Parishes" of southeastern Louisiana.

Sep 25, 2004 · Shame on them for passing spicy mush as Cajun food! The etouffee and jambalaya tasted nothing like their namesake and oddly enough they tasted alike. The gumbo was a thick tomato based sauce with peas or something crazy and the amazingly ungumbo-like sauce was sparingly placed on top of a bed of Uncle Ben’s Instant rice. It was a disgrace.

I know the show was originally produced for Mississippi, but I remember watching him on PBS in Alabama as I was growing up. Do you folks look at him as a real Cajun, or is he too gimmicky?
