I recommend checking out the main aus like underfell and outertale, before moving on to the big ones like Aftertale, Errortale, and Inktale. After you get a grasp and basic understanding of the popular sans aus, I recommend you check out X!Tale, and then its sequel Underverse. Underverse is mainly focused around the different versions of sans.
