Note: the best rice to use for fried rice dishes are day-old rice (in the refrigerator). If you use freshing cooked steamed rice, it's best to let it cool off in room temperature for about an hour before using it to cook fried rice.

Curry had fried onions, coconut milk, and tamarind. Basmati rice with spinach, fried shallots, and cinnamon stick. Interesting recipe - the spinach is cooked really dry.

Although pickles in general and particularly, pickled chillies are widespread, Guangxi and so Liuzhou loves its pickled chillies. And so do I. I also threw in egg, garlic chives, peas and carrots.

Made a pit in the middle, fried an egg, and then finished with cilantro, Asian basil, feta cheese, and a squeeze of lime. Fridge is ready for a fresh batch of groceries.
