What does straw wine mean? In Austria, the predicate Strohwein or Schilfwein denotes a sweet wine produced from fully ripe grapes with a minimum must weight of 25 degrees KMW. The grapes are dried for at least three months before pressing in order to concentrate the ingredients. This is usually done on straw or reed mats (hence the name).
