Apr 24, 2008 · Star anise seeds come in pods that look like, well, stars. As others have noted, star anise can easily overwhelm. Darker beers hold up better to large amounts. The higher the proportion of roasted malts, the broader the spectrum of complementary flavors. Anise can also be called sweet, so it is very complementary with Crystal malts.

Jul 13, 2009 · Notice the fellows adding 0.25 ounces of star anise to their beers are adding it to Stout. Stout is a bit more complex than Wit before spices are added; Wit can't take as much. Moreover, no one spice should dominate the flavor of Wit - it needs to be a broad spectrum, a blend of spice flavors. So go easy on the anise.

Jan 13, 2009 · When I added star anise to my dubbel, I tossed in one star at knockout. I haven't sampled it yet. A tripel might lend itself to less anise flavor than a dubbel, though. EDIT: well, 1/2 ounce is a lot more than 1/4 tsp, so maybe I'm wrong.

Nov 4, 2013 · Star anise is extremely powerful. I used 1.5 grams per 5 gallons on my last batch and people complained it was too much. Based on this experience I would recommend just 0.5 gram per 5 gallons for a smooth taste.

Oct 10, 2007 · I brewed a saison with two whole star anise. It was pretty overpowering at first, but mellowed out nicely over time. Four months in and it's very drinkable. Although next time I think I'll just use one Carbonation made quite a difference to mine, which makes it hard to judge just from tasting the secondary.
