Within this page is a table containing a complete list of all Segoe UI Symbol characters. I used this a lot and found it very useful, but one thing it seemed to be missing was details about the names of the buttons within the Common/StandardStyles.xaml file.

Segoe UI Symbol and Segoe MDL2 Assets are still available, but we recommend updating your app to use the Segoe Fluent Icons font. Most of the icons included in the Segoe MDL2 Assets font are mapped to the Private Use Area of Unicode (PUA).

Aug 8, 2015 · This morning I noticed some Windows UI system symbols where missing, replaced by vertical rectangles. I checked the Segoe UI Symbol Font, it is version 6.18 and it seems to be fine. Below is a screenshot of my desktop to show you what I mean.

Do a search (on Windows 8, it's Windows key + Q) for the "Character Map" app (it's included with Windows). It should open in the desktop. For the Font dropdown, select "Segoe UI Symbol". Then you can click on each symbol and at the bottom, their name and "U+E000" number is displayed.
