Heat olive oil in a skillet over high heat. Season tuna loin with salt and pepper, sear on all sides for 15-20 seconds each, until lightly browned. Remove from heat and let rest for 2 minutes before slicing into medallions.

There’s freshness of parsley, salty from Kalamata olives, earthy from red bell pepper and garlic, plus a hint of Greek seasoning. I’d use it for a dip, spread, or dressing too. I recommend making it a day in advance.
