Cast iron is pig iron remelted (or even, these days, shipped directly to a foundry in molten form) and cast into something useful. It still has 5% or more carbon, and the carbon separates out into flakes.

Hopefully you left your iron and coke nearby, so the dwarf only needs to go out and find a piece of dolomite. Next, you repeat the process but use an iron bar and pig iron bar.
