The wine undergoes malolactic fermentation, followed by eight months of ageing in lightly toasted French oak. Once bottled, the wine continues to age in our cellars. Bodegas Paniza’s vineyards are located within the territory that is marked out by the Cariñena Designation of Origin (An official certification from the Spanish Ministry of Agriculture).

Paniza Ultima Garnacha is a limited and numbered edition of 25,000 bottles. To make it, the last Garnachas are used, which are vinified each year, since they are Garnachas from several vineyards located in the highest areas of our vineyards.
