Mephisto Absinthe Classique is an absinthe verte produced by the Friedrich Fischer distillery in Vienna, Austria. The distillery traces its roots back to 1875 and Mephisto itself is based on a recipe that dates all the way back to 1909.

Like most pre-ban absinthes, Mephisto is made from a neutral spirit base and features a variety of unique blend of flowers and herbs, most notably, grand wormwood (A rtemisia absinthium), green anise and sweet fennel.

Once banned from production, this fashionable-again spirit is made from hard mountain spring water, pure grain spirits and a traditional blend of absinthe flavorings including anise, fennel and wormwood.

I find Mephisto to be an interesting yet unfruitful detour from a traditional absinthe. My gripes with it come from some of the flavors being hard to pick through, the entirely unsatisfactory louche, and short length of the finish.
