Maple syrup generally provides a little less fermentable sugar than does honey and contributes about 31 ppg versus about 35 ppg for honey. This means that 1 pound of maple syrup in a total volume of 1 gallon results in a starting gravity of 1.031.

I'd cut back a bit on the honey and maple syrup, or use a dry champagne yeast. How much maple syrup do you have, and how much do you like maple syrup? You might consider making an apple cider, sweetened with maple syrup instead of sugar, too.

Jun 2, 2016 · When I made a batch, I noticed the maple syrup mostly just fermented and didn't leave much maple flavor. I added half an oak spiral in a 1 gal batch, and then stabilized and backsweetened with 12 oz of maple syrup. Came out real sweet and probably will only be drank as a dessert mead.
