I use corn that I buy from local suppliers sold specifically for wildlife feed, not from chain stores because you never know what's in some of the bags.

Feb 2, 2021 · I feel the justification to malting corn is not for its enzymes, but rather for flavor. Yes, you can grind and mash wet corn, provided your grinder can handle it. Reports of grassy notes from using wet corn are common, although this flavor tends to fade somewhat as the spirit ages.

Jan 27, 2015 · Malting creates enzymes, and makes the starches available, but they still need to be converted to fermentable sugars. Can you rinse the sugars out with warm water then ferment not on the grain?
