Sep 29, 2008 · Haven't had a lavender mead, but last year Dave Wills made a Blonde Ale for the local lavender fest. HoV had a meeting at his brewery and he had us sample three different levels of dry 'hopping'. He also had some of his IPA that he added lavender to, very strange. The Blonde worked fine though.

Jun 29, 2015 · Once the mead finished the lavender had a perfect tertiary flavor that complimented very well. I wouldn't go too much more than 1/4 cup for a 5 gallon batch. I was using Lalvin EC - 1118 yeast is I was shooting for about 18% alcohol, but for most dark berry recipes I'd recommend Lalvin 71B-1122 vice D47.

If I like it then I know how much lavender I will need for my batch (in this case it's 1 gram of lavender/1 ounce of mead for a total of 128 grams of lavender. So knowing how much I need for my overall volume I need then to make a concentrated extract.

Jan 15, 2015 · Just thinking aloud here, but what if you made say, a gallon of jasmine tea and used that tea to dilute say 2.5 - 3lbs of a light flavored honey (clover or wild flower, perhaps) and then use a yeast such as K1 or 71B or D47 and ferment at lower rather than high temperatures (to preserve the aromatics and flavors in the tea).

Mar 17, 2012 · I made a lavender chamomile belgian table beer last summer, I used a .5 ounces chamomile flowers and culinary lavender @5 mins and wanted a bit more lavender flavor so I made a couple cups of a lavender tea with .25 ounces lavender and added that at bottling. now after ~ 8 months in bottles I'm really happy with the complexity of the flavors as they blend, but it took a bit of waiting.
