In episode 11, we see a final scene of Kaneki, his hair having turned white. This turns out to be a preview of things to come, his hair being brown at the start of episode 12. However, during episode 12, we see a scene, theoretically taking place in Kaneki's mind, or as a hallucination, wherein his hair fades from brown to white.

In season 3's trailer or "release", Kaneki was shown with black and white hair. This means Kaneki has a split personality but not with the girl that was in control before but with his ghoul and human personalities.

He is pretending to be human at the time, and she comments on his hair, Prompting Kaneki to reply that it is white Naturally. This happened in chapter 108/109. Its never really been the focus though.

Stress can cause rapid weight and hair loss. I don't know if hair turning white from fear is real but it is a common belief (see crash test dummy's MMM).

Dec 16, 2019 · They definitely change over time but this is most probably done either not intentionally or for the style. Unlike his hair, I doubt that it expresses any underlying meaning. For example, in darker scenes the color can be bright crimson or even scarlet but in some scenes (for example, Root A opening) it is light red and even close to pink.
