There are five Terrestrial Avatars: Diabolos, Phoenix, Fenrir, Carbuncle, Bahamut. In addition, there are six Celestial Avatars representing the six basic elements: Shiva, Ifrit, Leviathan, Ramuh, Titan, Garuda. All but Phoenix and Bahamut can be summoned.
