Aug 26, 2015 · I have been making egg noodles and hang drying them for a few years now with great results. I bought a kitchenaid with pasta press and thought I would make shaped pasta to sell at the farmer's market as well as the egg noodles. The pasta comes out great but when it dries, it breaks in half lengthwise making it unsellable as macaroni or rigatoni.

Nov 26, 2011 · One tip is to heavily dust your pasta sheet and machine with flour during the cutting stage if u are using the attachment. This will mean the pasta won't pull through the machine, it will slip, making a straighter cut and dry. The main factor will be the drying conditions, you want a draft free area, away from light. The cooler the better.

Jan 13, 2016 · I had this happen the first time I tried making homemade pasta. My issue was that the pasta dough wasn't stiff enough. Fresh pasta dough should be very thick (stiff). You should be able to take the dough from the fridge (where it's been resting for about 30 mins), knead it with no flour and not have any dough sticking to your hand.

Pretty much every cuisine has some sort of noodle or pasta dish. Cold Japanese soba salad. Italian cacio e pepe, American chicken and noodles. And then there's China. Talk about variety!

Aug 14, 2010 · When it is dry, pour a little oil, preferably evoo over, and toss it in the colander again. Turn the pasta into a clean bowl, add a little more oil if necessary -- you want the pasta slick, but not swimming in oil -- and toss yet again. Cover the bowl tightly with cling wrap. Note 1: Rinsing in cold water serves too purposes.

Feb 27, 2021 · Dehydrating pasta can be as simple as letting it air dry in a non-humid place. But, there likely going to be more to selling pasta to local retailers than just figuring out how to dry it. With that said, the suggestions in this thread are excellent.

I've read the posts about freezing but freezing can lessen the quality of food. I read an article on drying cooked pasta in a dehydrator for 2-4 hours at 135[sup]o[/sup]F.

Jan 14, 2009 · This doesn't speak directly to making pasta, but should give you an idea. With all the rolling and stretching, pasta dough takes a real beating. A really high gluten count helps keep the dough going. You can make all sorts of Italian type (as opposed to say Chinese) noodles with whole wheat flour, graham flour, bread flour and even AP flour.
