My favorite is probably small continents for the mix of continent land masses as well as archepilagos, really allows land and naval dominant civs to compete. I also really enjoy loading random map types, so you actually start off in the dark, and constantly learn more about your world as you explore it. I refer to play huge maps with 10-12 civs.
