Feb 26, 2011 · Yeast actually cleans up the primary flavor associated with green apple during fermentation (if there isn't way too much). I like to leave my beer on the yeast for 1 week following terminal gravity. I'm thinking the temp issue is creating too much aceldehyde and the aging issue is not allowing the yeast to clean it up.

Aug 15, 2021 · The next day I back sweeten with 1 cup of boiling water to 3 cups of sugar till sugar dissolves and I’ll add a can or 2 of frozen orchard sprays apple concentrate for the apple flavor. I shoot for 1.020 FG which is semi sweet cider. When your back sweeting and adding apple it’s pretty much a add a little and taste. Hope this helps some.

Oct 17, 2023 · Over all, the biggest apple flavor in the finished product came with D47 & Premier Rouge. Next were the RC-212 & CY17 that did not quite have the same strength of apple flavor but were very well rounded ciders with great drinkability.

Adding one 12oz can of frozen apple juice concentrate to one gallon of juice will not only raise your ABV to 7% or so, but it also adds a huge amount of apple flavor to your cider. EDIT: The past few batches I have been using Red Star Pasteur Yeast. NOT Pasteur Champagne yeast.

Mar 27, 2016 · At kegging, I was disappointed to find that the beer was slightly tannic and lacked the flavor profile I wanted... I then mixed a 1/2 gallon of fresh apple cider with 2 tbls vanilla extract and 1/2 tsp cinnamon then split that between the 2 kegs. The sweetness of the cider hid the tannic and brought back the apple pie flavor I wanted.

Nov 6, 2015 · The next beer was with Lallemand's Voss Kveik which I doubt was underpitched. Also they say this yeast doesn't really need to clean up and can withstand higher temperatures. So I was very confused off why this beer had the taste and for so long. The beer was bottled at day 6 with taste notes including fruity and clean.

Six pounds of mashed Granny Smith apples, three and one-half gallons of Tree Top 3 juice blend and twenty cans of concentrate. There is definitely a large percentage of alcohol in this batch as the O.G. was somewhere north of 1.086.
