I can only answer regarding the diesel drivers half day experience. My Son had just over 3 hours, experiencing the role of driver and secondman. He loved it and had a brilliant time.
Thinking of booking the Saturday fish and chips experience just wanted to know how the steam train is set in the dining area for the fish and chips lunch. Some of the pictures the dining area looks all dressed up and waiters and then there is a picture with it not dressed or no waiter service. If anyone has any pictures of the Saturday fish and chips lunch I would be very grateful.

Try to avoid weekends and arrange you visit for mid-week. If you check their web site or give them a ring, they will be able to tell you when trains are running. They are very accommodating out there, give them a bit of notice and they will probably be able to give you and your guest a peek behind the scenes and a tour around the site. You don't lose anything by simply asking the question, and you will probably be pleasantly surprised!
How do we book tickets to the steam engine ride? On your website, it asks for the login however there is no option to register (or perhaps am missing something) Can we get the tickets on the spot?
